Think my eczema is so bad cause not getting enough fat:/

Was planning on only eating 1/4 avocado and 2 tbsp hummus as my fats for the day but would have been wayyy too little!

Ended up having
2 apples
5 dates
1 large banana

1 mango
2 apples
Some grapes

Romaine with 1/2 can corn and 3/4-1 cup peas
Some no fat chips

Homemade Burrito Bowl with
-5-ish cups romaine
-3/4 cup white rice cooked with 1/2 tbsp coconut sugar, 1/4 cup lime juice, 1.25 cup water, cumin, onion, and jalapeño
-Other 1/2 can corn mixed with diced tomatoes, rice wine vinegar, chili powder, onion powder, cumin, and smoked paprika,
-1/2 avocado mashed with tomatoes, same spices as above, homemade salsa, and lime juice
-1.5 servings Chipotle Hummus
Nutritional Yeast

Still fell within 10%! Gonna track cals for a little to make sure I get enough cause my eczema is rly bad!

What I Ate Wednesday!

Coming to the end of my groceries

4 Bananas

2 Apples
4 Dates
2 Large Bananas

Salad with about 5 Cups Kale, 1 Small Roasted Beet, 1 cup Sliced Mushrooms (loooove mushrooms and beets together) and dressed with 1/4 mashed Avocado, Lime Juice, and Balsamic

1 cup Edamame Unshelled

3/4 cup Rice cooked with 1&1/2 cups Water, 1/2 tbsp Coconut Sugar, 1/2 tbsp Vinegar, Cardamom, 1 tbsp Coconut Amino Onions. Served with Peas, Mushrooms, and Grilled Zucchini

No Fat Chips with Homemade Salsa

Carob Powder Oatmeal made with 3/4 cup Oats, 1.5 cup Water, 1 Tbsp Coconut Sugar, 2 tbsp Carob

No Fat Chips with 2 Tbsp Chipotle Hummus (only 2.5 g fat per serving Vs 6 in Sabras!)
